Debit is a native Dalmatian white variety known for its freshness, minerality, and crisp character. Traditionally a still wine, here reimagined as a sparkling expression. Oklaj (Drniš region) is positioned between the slopes of Promina mountain and the Krka River valley. This unique location combines Mediterranean warmth with continental coolness. Hot, dry summers are balanced by breezy, cooler nights, creating ideal conditions for sparkling base wines with high acidity and finesse. We craft this sparkling wine using 225L Slavonian oak barrels under pressure to avoid any contamination. Grapes are hand-picked early in the morning for freshness. Only the best bunches are hand-selected. Immediately transported for crushing and gentle pressing. Fermentation occurs under anaerobic conditions, developing fine aromas. Regular battonage ensures that fine lees get nicely integrated into wine. This is our first-ever harvest of Debit for sparkling wine, produced in extremely limited quantities. It will be available exclusively through Bòme Shop and prior to that to members of Bòme Krug.
